What Is Samgyupsal in Metro Manila?

Samgyupsal, also written as samgyeopsal, refers to Korean-style grilled pork belly. The name literally refers to the three-layer appearance of the pork belly.

In Korea, samgyupsal can be ordered à la carte, with diners choosing different cuts and dishes to grill at the table. In the Philippines, the experience has evolved into something much bigger.

Here, the phrase “samgyup” often means an unlimited Korean BBQ experience.

A typical unli samgyupsal in Metro Manila usually comes with:

  • Unlimited pork belly and other meats

  • Beef and chicken on higher-priced packages

  • Korean side dishes or banchan

  • Kimchi

  • Lettuce for ssam

  • Garlic

  • Dipping sauces

  • Rice

  • Cheese or corn cheese at some restaurants

  • Korean noodles or other side dishes

  • Drinks at selected restaurants

You grill the meat yourself at the table, cut it into smaller pieces, then eat it with lettuce, kimchi, garlic, ssamjang, cheese, or your preferred combination.

This is why Korean BBQ is more than just eating meat. It becomes a group meal where everyone gets involved.

For many Filipinos, the biggest attraction is the unli format. Instead of ordering individual plates, you pay one fixed amount and keep ordering from the restaurant's available selection.

Some restaurants have a time limit, commonly around two hours, while others advertise longer or no time limits. Some also charge different rates for children based on height.

 

How Samgyupsal in Metro Manila Differs from Samgyupsal in Korea

In Korea, K-BBQ restaurants usually charge per serving of meat. You order a portion of pork belly, grill it, and order more if you want. The focus is on the meat itself, often plain or lightly seasoned, with ssamjang, garlic, and kimchi on the side.

Metro Manila took that idea and made it unli. Eat all you can samgyupsal in Metro Manila became the standard. Filipino diners also got marinated flavors like herb, curry, honey garlic, and bulgogi. The melted cheese dip is a local favorite that you won't often see in Seoul. Rice is included too, because a Filipino meal without rice feels unfinished.
